Summer Black Bean Salad with Seasonal Vegetables

I have another personal favorite that I want to share. I told y'all previously in my last post that summer is a good time to make cool, light meals that is low fuss and keeps you out of the kitchen (well almost). The Mango Black bean salad is one of my favorites for this time of year. It's so good on tacos and in a salad, or just a light side dish to keep you satiated until the big meal is ready. Either way this is a treat. I hope you like it!

Ingredients:

  • 2 ripe mangoes, peeled and diced

  • 1 can black beans, drained and rinsed

  • 1 red bell pepper, diced

  • 1/4 cup red onion, finely chopped

  • 1/4 cup fresh cilantro, chopped

  • 1 jalapeño, seeded and finely chopped (optional)

  • Juice of 2 limes

  • 2 tablespoons olive oil

  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the mangoes, black beans, red bell pepper, red onion, cilantro, and jalapeño.

  2. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.

  3. Pour the dressing over the salad and toss to combine.

  4. Chill in the refrigerator for at least 30 minutes before serving.
