Hey friend, I hope you're staying cool in this lovely summer weather but it has been hot! if you're anything like me, I use this time of year to take advantage of the grill outside and experiment with clean, cool, refreshing meals to keep the heat out of the kitchen. I recently made this recipe for my family and let me tell you...they loved it, and it was quick and affordable. Try it and let me know what yout think!

Grilled Lemon Herb Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts

  • 1/4 cup olive oil

  • Juice of 2 lemons

  • 3 garlic cloves, minced

  • 1 tablespoon fresh rosemary, chopped

  • 1 tablespoon fresh thyme, chopped

  • Salt and pepper to taste

Instructions:

  1. In a small bowl, whisk together the olive oil, lemon juice, garlic, rosemary, thyme, salt, and pepper.

  2. Place the chicken breasts in a sealable container and pour the marinade over them.

  3. Seal the container and refrigerate for at least 30 minutes, or up to 2 hours.

  4. Preheat the grill to medium-high heat. Remove the chicken from the marinade and grill for 6-8 minutes per side, or until fully cooked.

  5. Serve with a side of grilled vegetables (I used grilled asparagus) or a fresh salad.
